- 01Cook brown lentils in salted boiling water for 20 minutes until tender. Drain and set aside.
- 02Cook rice according to package directions. Cook elbow macaroni until al dente. Drain both.
- 03Slice onions thin and fry in vegetable oil over medium-high heat until deep golden brown and crispy, about 12 minutes. Drain on paper towels.
- 04In remaining oil, saute garlic for 30 seconds. Add tomato sauce, vinegar, and cumin. Simmer for 10 minutes.
- 05Layer in a large serving dish: rice on bottom, then lentils, then macaroni. Top generously with crispy onions.
- 06Serve immediately with tomato sauce on the side.
