Ingredients
2 cups Egyptian rice, rinsed
1 cup brown lentils
1 cup elbow macaroni
3 large yellow onions, sliced thin
4 cloves garlic, minced
2 cups tomato sauce
2 tbsp white vinegar
1 tsp ground cumin
Vegetable oil for frying
Salt to taste
Instructions
  1. 01Cook brown lentils in salted boiling water for 20 minutes until tender. Drain and set aside.
  2. 02Cook rice according to package directions. Cook elbow macaroni until al dente. Drain both.
  3. 03Slice onions thin and fry in vegetable oil over medium-high heat until deep golden brown and crispy, about 12 minutes. Drain on paper towels.
  4. 04In remaining oil, saute garlic for 30 seconds. Add tomato sauce, vinegar, and cumin. Simmer for 10 minutes.
  5. 05Layer in a large serving dish: rice on bottom, then lentils, then macaroni. Top generously with crispy onions.
  6. 06Serve immediately with tomato sauce on the side.
